Get 'Primed' For Something New: Mexican Cafe To Open In Ridgefield RIDGEFIELD, Conn. -- Get ready for some added spice in Ridgefield. A  new Mexican-themed eatery is coming to the downtown area, courtesy of Bob Sperry, co-owner of Ridgefield Prime and Prime Burger. Prime Taco will open sometime in late summer, either in late August or early September. No location has been confirmed yet though it's been hinted that the fast casual eatery will take over an existing location.  Menu items will include Mexican favorites such as tacos, quesadillas, and burritos as well as craft beers, wines, and margaritas.
